Pressure Cooker Bolognaise

Ingredients

2 tbsp Oil

2 Large Onions

2 Cloves Garlic

500gm Minced Beef

375gm Jar Tomato Paste

810gm Crushed Tomatoes

2 tsp Basil Leaves

1lt 200ml Water

500gm Pasta – Shells and Macaroni work well.

Method

Sauté Onions in the oil for 5 minutes

Add the Garlic and sauté another 2 minutes

Add the Minced Beef to the pot and sauté until the meat is browned well

Add Tomato Paste & Tin of Crushed Tomatoes (include liquid)

Mix through & Pressure cook on Low for 10 minutes then quick release

Add the Water, Pasta and Basil, stir through

Pressure Cook on Low for 5 minutes

Open vents & let the cooker come down in pressure until the lid opens easily, add 200ml water if you like your sauce thinner

Serving Suggestion

Serve with freshly ground black pepper & shaved parmesan cheese.

Optional – 1 cup chopped spinach or 1 chopped zucchini when adding the water.

Serves 4-6

- You don't have to measure the water, just fill your empty tomato tin once and then half again for your 1 lt 200 ml water content.

- The dish will look very runny before your final 5 minutes of cooking, don't worry, the pasta will soak up all of that water, and thicken your sauce with starch at the same time.

- If the sauce is too thick for you at the end of cooking you can always add 200 ml more water if you like your sauce thinner.
